Maple Candied Pecans
1 lb pecan halves or chopped pecans
1 large egg white
1 Tbsp water
1 teaspoon vanilla extract
3/4 cup maple sugar or coconut sugar
1/2 teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon pumpkin pie spice

Instructions
Preheat oven to 250° F. Line a large rimmed baking sheet with parchment paper.
In a large mixing bowl, use a whisk or an electric hand mixer to beat the egg white with the water and vanilla. In a separate small mixing bowl, whisk together the maple sugar or coconut sugar, cinnamon and salt.
Add pecans to egg white mixture and toss until evenly coated.
Pour the sugar mixture over pecans and toss until evenly coated. Arrange the coated pecans onto the prepared baking sheet and spread into an even layer.
Bake in the preheated oven for 1 hour, making sure to stir midway through.
Let cool. Keep stored in tight container in room temperature.
